Try our Marinated Salmon with Warm Potato & Wild Garlic Salad, perfectly dressed with Womersley’s Lemon, Basil, Bay & Juniper Vinegar, adding a zesty, aromatic touch!
A beautifully fresh and flavourful dish, perfect for spring! Succulent marinated salmon pairs perfectly with tender warm potatoes and fragrant wild garlic, all brought to life with the zesty and aromatic notes of Womersley’s Lemon, Basil, Bay & Juniper Vinegar.
1 tbsp olive oil
Handful of wild garlic
1 tbsp womersley’s Lemon, Basil, Bay & Juniper Vinegar
1 tsp wholegrain mustard
Squeeze of half a lemon
1 tbsp Womersley’s Lemon, Basil, Bay & Juniper Vinegar
Whisk together all the marinade ingredients throughly, pour over the salmon and leave in fridge to marinade for 2hrs at least or over night.
Half an hour before serving, boil the baby potatoes until cooked but still firm, drain and leave warm with lid on. Place to one side .
Dice the red onion, saute until golden brown in the tbsp olive oil. Add the wild garlic, the extra 1 tbsp vinegar and 1 tbsp olive oil and place to one side.
Place the salmon in a small deep pan with all the marinade and place under a medium grill for 10 mins. Leave to rest for 5mins.
Add red onions and wild garlic to the warm potatoes. Add salt and pepper.
Place the Salmon on the plates, pour the cooked marinade over the potatoes and wild garlic. Season with salt and pepper to taste.
Serving suggestion: Serve with a crisp green salad and a chilled glass of white wine for a light yet satisfying meal. For extra indulgence, drizzle a little more Womersley vinegar just before serving to enhance the flavours!
These are subtle vinegars, not too acidic but with great flavour. I started with the raspberry vinegar but tempted by some samples I now use several of these truly delicious vinegars. Good quality olive oil with any vinegar makes an easy light salad dressing. Use too in fruit and savoury dishes for a ‘lift’.
