1 cantaloupe melon

1 red onion

1/2 cucumber

1 punnet of cherry tomatoes

1 punnet of strawberries

2 tbsp of mixed seeds

150g of Feta
-
1 handful of Greek basil
For the Dressing
-
50ml of Womersley Foods’ Rapeseed Oil from the Cotswolds
-
20ml of Womersley Foods’ Lime, Black Pepper & Lavender Vinegar
- 1 tsp honey
- Pinch of salt
- Cracked black pepper
Directions
Place the following ingredients into a large salad bowl; peeled melon, cut into 2cm cubes finely sliced red onion cucumber, cut in half lengthways with seeds removed tomatoes cut into halves strawberries cut into about 1⁄2 cm slices.
Sprinkle in the seeds and mix together.
In another bowl or spare jam jar, whisk together the ingredients for the dressing and pour over the salad.
Mix the salad together, ensuring the dressing coats all the salad.
Crumble the Feta with your hands or chop into small cubes or pieces and add to the salad.
A final scattering of picked Greek basil will finish the salad perfectly.
