100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
Pinch of salt
Dash of Womersley Lemon, Basil, Bay & Juniper Vinegar
1 lemon
Granulated sugar to serve (optional)
Place the flour, eggs, milk, 1 tbsp oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. Set aside for 30 mins to rest.
Preheat your frying pan over a medium heat and carefully wipe it with some oiled kitchen paper.
Once the pan is hot, cook your pancakes for 1 min on each side until golden.
Serve with a dash of Womersley Lemon, Basil, Bay & Juniper Vinegar, lemon wedges and sugar to taste.

I love a few cockles from the fish monger on a Saturday I add orange and mace vinegar and it is like heaven match, I watched James Martin this week which had a fish stew and he added orange peel so it must be a good flavour complimenting
