Ingredients

4 small brown onions
6 tbsp red wine
2 tbsp Womersley Cherry Balsamic Vinegar
2 tbsp butter
1 tbsp olive oil
1 tbsp light brown sugar
Heaped tsp Thyme
1 box of ready rolled puff pastry or 350g home made puff or butter short crust
8’ shallow skillet or oven pan

Directions

Peel and half the onions, cut diagonally around the middle.
Place the skillet or pan on a medium heat on top of the stove and melt the butter with the olive oil and brown sugar until the sugar has dissolved, add the red wine.
Add the onion flat side down, gently cook for ten mins, still on a medium heat so it is gently bubbling.
Pour over Womersley Cherry Balsamic vinegar and bring to a simmer again. Take off the heat and leave to one side.
If using ready rolled puff pastry, fold in half and gently roll out with a rolling pin into a square. If using home made pastry, roll out into a circle slightly larger than the pan.
Place the pastry on top of the onions and tuck in the edges of the pastry. Tuck the corners in if using ready rolled to seal.
Bake in a medium hot oven 350-375F / 180-190C Gas Mark 5 for 25 mins.
Leave to rest for 15-20 mins before turning out onto a plate.
Scatter with the fresh thyme and drizzle with extra Womersley Cherry Balsamic Vinegar if desired.
