Balsamic Beetroot, Feta and Fig Salad recipe, made with Womersley Foods Award Winning Blackberry Balsamic Vinegar of Modena handcrafted in Modena Italy with natural ingredients.

Ingredients

1 kg Cooked beetroot
2 tbsp Womersley Foods Blackberry Balsamic Vinegar
2 tbsp olive oil
Black pepper
1 block feta 250g
4 fresh figs
1 red onion

Dressing

2 tbsp Honey
2 tbsp Womersley Blackberry Balsamic Vinegar
4tbsp Olive oil
A good squeeze of lemon juice
Salt and black pepper to taste

Extras

Handful of blackberries to garnish
Fresh Thyme or rosemary

Directions

Dice cooked beetroot into 2.5 com cubes, slice the red
onion
Place into a bowl and add the balsamic, olive oil and
pepper, mix together throughly
Place into a roasting tin and roast in a medium /hot
oven for 20 mins
Meanwhile dice the feta and cut figs into 4-6 dependent on size
To make the dressing, place all ingredients in a jar and
shake for a good 3 mins
Once beetroot has roasted, leave to cool a little, add
dressing and stir together, add feta and figs and gently
fold in, place on a platter, garnish with blackberries
and thyme
Drizzle with extra balsamic as needed
