Pickled Mary

50ml Vodka
22ml Womersley Lemon, Basil, Bay & Juniper Vinegar
8ml Lemon Juice
5ml Pickle syrup
75ml Tomato Juice
2 dashes of Worcester sauce
6 dashes of tabasco
Pinch Celery Salt
4 basil leaves
Grind of black pepper
Place all ingredients into a shaker with ice, roll ingredients rather than shake and strain into an ice filled Hi-ball.
EmbellishSliced Gherkin, grind of black pepper & a celery sticks.
RemarkA twist on the classic Bloody Mary with the introduction of Lemon, Basil, Bay & Juniper Vinegar and pickle syrup which will intensify the flavours of this traditional Brunch cocktail. A careful balance of sugar from the pickle syrup complement the acidity of the vinegar & lemon juice, making way to a back ground note of basil combining with fresh tomato juice and finishing with a gradual warmth of the spices and tabasco.

45ml JOVEN TEQUILA
12.5ml Triple sec
12.5ml Lime
15ml Womersley Golden Raspberry & Apache Chilli Vinegar
5ml Agave syrup
Pinch of salt
How to Create
A slice of chilli should be rubbed on the inside rim of the glass
Shake all ingredients with ice and strain into a rocks glass.

How to create
Place a measure of Lemon, Basil, Bay & Juniper Vinegar into a chilled martini glass. Place all other ingredients into an ice filled mixing glass, stir until chilled. Swirl & discard the Lemon, Basil, Bay & Juniper Vinegar. Strain mixing glass ingredients into martini glass and serve ‘I’ MARTIN.

When making a drink at home, you want it to be quick, easy and delicious. This twist on a classic sour, named after the Tate & Lyle Sugars refinery by the Thames, is a showstopper.
Serves one.
40ml gin
1 egg white (20ml)
15ml golden syrup
15ml lemon juice
10ml Raspberry Vinegar
Put everything in a shaker and shake vigorously. Add ice, shake again to cool, then strain into a coupette.
